Description
Our Byrdeaux is a delight from the get-go, with alluring black fruit and violets on the nose and palate. The tannins have softened with age, but still provide plenty of grip. Black cherries, tobacco, and coffee linger on the palate in an enticing manor – it’s remarkable how the wine maintains such tension after over a decade since harvest.

Acidity: Medium, integrated well within the tannins
Drinking Window: Drink now or cellar for another few years. The wine has plenty of character in it, and further aging will allow the tannins to mellow further.

Serving Temperature: 58° – 65°F
Food Pairings: Lamb prepared in a roast and served with tomatoes povencal and a pomme purée. Although, just about any red meat dish or aged cheese would pair beautifully with this wine.
