Acidity: Mild, well structured

Drinking Window: Drink now or hold for a few years. The wine is still exuberant, and the tannins have softened, but the wine’s balance has left even this 11 year old bottle a lovely structure. No astringent tannins and plenty of expressive fruit. 

Aging Potential: 10 – 14 years

Serving Temperature: 58° – 65°F

Food Pairings: Enjoy with a prime rib, cooked medium-rare, and don’t forget the loaded potato – with pancetta instead of bacon. The body of the wine will pair well with this classic, flavor-loaded beef dish.
